Chocolate Granola Recipe

Something that was firmly on my resolutions list was to stop ordering food delivery (remember my mantra for the year was ‘health‘?)  so much – towards the end of last year when things were crazy in the office it was really easy to hit the send button on that seamless app and just wait for food to arrive. Over and over. But just saying I would stop wasn’t going to help, I needed to do something about it.

But as much as I would like to think that I can magically create time to cook during the week, sometimes it’s just too tricky. And so the solution has been the Sunday cooking session, an attempt to set myself up for a healthy week to come! Often I make lots of dinner recipes – soups, curries and quiches, but always, without fail, there’s a granola recipe in there. This is a new one I’ve been loving! Reminds me of the special holiday cereal we were allowed to get a few times a year… but a little bit healthier! Still has that chocolate milkshake effect on the milk that I love. I’m also toying with the idea of a healthy apple crumble granola, I’ll get back to you on that one asap!

Chocolate Granola Recipe

It’s crazy easy to make, you can literally do it in under 15 minutes. Make a huge batch of this chocolate granola and it keeps for atleast two weeks!

Ingredients

  • 2 cups of flaked coconut
  • 1 cup of buckwheat groats
  • 2 cups of pumpkin seeds
  • 1 cup of raisins
  • 1 cup of flax seeds (I like the golden ones)
  • 1 cup of cacao nibs
  • 2 cups of chopped almonds
  • 2 pinches of salt
  • 1/2 a cup of cacao powder (unsweetened)
  • 2 tablespoons of coconut oil
  • 2 tablespoons of honey

How to

  1. Preheat the oven to 180 degrees celsius / 356 degrees fahrenheit.
  2. Roughly chop the almonds.
  3. Put all the dry ingredients in a big bowl and mix together with your hands.
  4. Add the honey and coconut oil, and use your hands to massage all the ingredients together. Make sure it’s all coated well with honey and coconut oil.
  5. Lay some baking paper on a tray and the spread the mixture onto it.
  6. Put the mixture into the over and bake for 10 minutes. Pull it out and use a spoon to turn the granola.
  7. Give it another 5 minutes in the over and then pull it out to let it cool.

Ps thanks so much for all your tips about what to do with those healthy ingredients in my pantry I hadn’t used yet – I’ve definitely been using them more in 2017! But the way, how is your word for the year going? Is it helping to guide your decisions and lifestyle? I’m having to remind myself of mine now and again but I guess that’s the point, right?
